Pilar Sanchez, an elderly home cook who lives in Asturias, taught Mario Batali and Mark Bittman how to make pollo casero, a luscious chicken in rich white wine and pepper sauce. When they asked where she buys her poultry, Sanchez told them to go to her yard and listen for the “singing in the field” from the chickens she raises.

Pairing Suggestion

This hearty chicken dish will pair well with any number of wines, both white and red, so split the difference and pour a lively Spanish rosé (or rosado, as the Spanish call it). Some of the best come from Rioja, like the fruity 2007 Bodegas Muga and the berry-scented 2007 El Coto.

I really didn't think this was anything special. I wouldn't make it again. There are too many other recipes of this type out there.

I made this dish after seeing it on "On the Road Again" with Mario and Gywneth and also trying the dish at a local Spanish restaurant. This recipe was very good...I would add some peppadew or other pepper with a little kick to it to give the dish a bit more flavor.
