Stuffing chicken breasts with goat cheese doesn’t seem like a particularly healthy approach. But by using only a small amount of goat cheese and mixing it with chopped walnuts and lemon zest, Annie Wayte creates a dish that’s both nutritious and delicious.

Goat Cheese-Stuffed Chicken

Delicious. The lemon really brightens it up, and the flavors work really well together. My husband was afraid the sauce was going to be a bit bland and thin (he saw it before I added the parsley, walnuts and walnut oil), but loved the flavor when it was done. We had swiss chard sauteed with shallots and a dash of balsamic on the side.

I loved it, have passed this along to friends who have also loved it. my boyfriend requested more goat cheese- so my version isn't quite as figure friendly as this version, but tasty nonetheless!

A bit bland... served with some egg noodles that I used the sauce with) and sauteed carrots, mushrooms, snap peas and zucchini.  the chicken was cooked well, nice and moist.  has potential
