As a student at the Culinary Institute of America in Hyde Park, New York, Top Chef winner Hung Huynh learned to cook with the Chinese trinity—GGS, or ginger, garlic and scallions. He uses all three here to flavor his earthy, mushroom-and-bacon-studded clay pot rice.

Honestly, I was surprised at how delicious and flavorful this dish was. I imagined it was going to be a little greasy and bland. My husband loved it and even the leftovers were enjoyed. I did burn the bottom of the rice in the end, but that that was my fault. Will do again.

I loved this recipe. The rice and the bacon were delicious together and the aromatics added such a burst of flavor.
