Slow-Roasted Tomatoes
In a hurry I used tapenade instead of chopped olives and reduced the olive oil to 2 tablespoons - lovely

This recipe is unbelievably easy to prepare. It provides a nice little intro or additional dish with which to entertain. I used mixed pitted olives (I was out of Nicoise, as well), but the dish was well recieved all the same.

Delicious, super-easy and a great way to use Roma tomatoes that are not ripe. I used Kalamatas (as I didn't have Nicoise on hand) and it was just as good.
