Anything big made small is ultrafun for cocktail parties, and these quick, one-bite mac and cheeses are the ultimate example. Cooked in mini muffin pans, the mini macs can be assembled early and baked just as guests arrive.

Pairing Suggestion

Plummy, full-bodied Merlot: 2005 Blackstone Winery.

Three-Cheese Mini Macs

these were good and very cute. I didn't use american cheese but added gruyer and also didn't add the egg. I had to thin the bechemel just a tad. i packed them pretty hard and added buttered bread crumbs to the top. they came out and held together fine, I think it's important to let them cool in the tins for a few minutes.

For the person that had it come out a "globby mess," I would recommend not tapping out the excess cheese and cook a little longer. The crispier the cheese is that it sits in, the easier it is to come out.

I've made this recipe 2 years in a row for Super Bowl parties and they were a big hit each time with the kids and adults! They are delicious!!! I'm going to make them again for my friends 30th birthday party (she asked me to)!
